THE COMPARATIVE STUDY OF DETERMINING AMYLOSE CONTENT FOR VARIOUS INDIGENOUS RICE VARIETIES IN DINAJPUR DISTRICTS OF INDIA AND BANGLADESH

Abstract

The presence of amylose and amylopectin in rice or any other cereals is an important parameter to determine the quality of rice or cereals. Due to emerging interest on indigenous rice varieties in recent time, we have determined the amylose and amylopectin content of three landraces indigenous rice varieties of India and Bangladesh. We have determined the amylose content by standard Juliano’s method. The amylose content of prepared and stock solutions was determined by this method. The amylose content for prepared solutions of Begun Bichi (Ind), Begun Bichi (BD) and Kalojeera (Ind) is 12.37%, 13.72% and 14.89% respectively. The amylose content of the stock solution of Begun Bichi (Ind), Begun Bichi (BD) and Kalojeera (Ind) are 14.93%, 17.90% and 17.59% respectively.
